Cheeseburger Cupcakes!


How cute are these?! I'm not quite sure how, but once upon a time Kaitlyn stumbled upon these random YouTube videos of Nerdy Nummies, in which this girl Ro demonstrates all her cute baking projects. In one of the episodes she makes cheeseburger cupcakes. Kaitlyn was so entranced with this episode and watched it dozens of times. For a while it was the first thing she asked to see every morning. Anyway, there was something very intriguing about these cheeseburger cupcakes and after months of watching, I just had to try making them myself. Kaitlyn was more than happy to help.

In one part of the video, the girl tells us "it's okay if it's messy." Kaitlyn loved knowing that she had approval to be messy. 

A cheeseburger cupcake consists of a cupcake, cut in half to resemble the bun. The burger is a chocolate brownie, layered with "ketchup" and "cheese" frosting, and shredded coconut flakes for lettuce. It was a little difficult to take photos during the assembly process since I was managing Kaitlyn at the same time, and she was so eager to get her hands on everything. Her favorite parts were mixing the colors into the frosting, and then using the pastry bags to squeeze the frosting onto the cupcakes.

So happy with the end result!

Yum! They turned out pretty good. A little bit messy but so fun to eat. Most importantly, Kaitlyn was soooo happy that she finally got to make cheeseburger cupcakes!
